Gajar Ka Halwa Recipe in Pressure Cooker
Ingredientes
- Carrot½ kg
- Ghee3 cdas.
- Milk500 ml
- Sugar
- Cardamomo · powdera pinch
- Cashew2 cdas.
- Almond2 cdas.
- Raisin1 cda.
Preparación
- Wash the carrots, trim the tops and bottoms, peel them, then grate them on a large-holed grater into a bowl.
- Set a pressure cooker on high heat, add the ghee and let it warm slightly. Add the grated carrot, stir and cook for 3-4 minutes until its moisture has evaporated.
- Add the milk and stir once. Pressure cook on medium heat for 1 whistle, then switch off the flame and let the pressure release naturally.
- Open the lid and check the whistle. Cook on medium-high heat, stirring constantly, for 10-12 minutes until most of the milk has reduced.
- Add the sugar and cardamom powder, stir and cook for 4-5 minutes until the halwa thickens again. Stop cooking once the sugar's water has evaporated and the halwa looks slightly shiny, before it becomes tight like barfi.
- Switch off the flame. Heat 2 tablespoons of ghee in a pan, add the almonds and cashews and fry, stirring, until light golden brown.
- Add the raisins to the nuts just before they finish browning and stir briefly.
- Pour the ghee and nut mixture over the halwa and stir well. Let it rest for a couple of minutes before serving.
