Ingredients

Instructions

  1. In a bowl, combine the wheat or multigrain flour and salt. Add a mix of ghee and oil, or one of them, and combine until crumbly.
  2. Squeeze the water out of the grated radish. Knead the dough using a little of that radish water and some plain water. Once kneaded, smear a little oil on the dough and rest it in a closed container for 15–20 minutes.
  3. Add the grated carrot and radish (about 1 1/2 cups), red onion, chopped coriander, ginger-garlic-green chili paste, carom seeds, coriander-cumin powder, turmeric, garam masala, salt, amchur and sugar to the bowl. Mix well.
  4. Roll the filling into lemon-sized balls. Take small portions of dough, roll each into a slightly larger than lemon-sized ball, flatten it, place a filling ball in the centre, close it up and roll into a flat round or square paratha.
  5. Fry the parathas in a skillet over medium heat, drizzling with a little oil, until both sides are fully cooked.
  6. Serve hot with raita of your choice and a slice of butter on top.
