Galette des Rois (French Kings Cake)
Ingredients
- Puff pastry2
- Egg4
- Butter⅔ cups
- Sugar1 cup
- Almond · ground1 ¼ cups + 2 tbsp
- Vanilla1 tsp
- Orange
- Lucky charm
Instructions
- Roll out the puff pastry if needed and cut two 9-inch (23 cm) circles. Place them on a baking sheet and refrigerate while you make the filling.
- In a large bowl, cream the softened butter and sugar until smooth. Beat in the eggs one at a time, mixing well after each. Stir in the ground almonds, vanilla extract and orange zest until combined. Transfer to a piping bag or use a spoon.
- Place one pastry circle on a lined baking sheet and brush the outer edge with egg wash. Pipe the filling in a spiral, leaving a 1-inch (2.5 cm) border. Press the lucky charm gently into the filling. Cover with the second circle and seal the edges well.
- Brush the top with egg wash and refrigerate for at least 1 hour.
- Heat the oven to 350°F (180°C). Brush the galette with egg wash again. Score a decorative pattern on top with the back of a knife, without cutting through. Bake 35–40 minutes, until deeply golden and puffed.
- Optional: heat the 1/4 cup sugar and 1/4 cup water until dissolved. Brush the hot galette with this syrup. Let it cool slightly before serving.
