Ingredients

Instructions

  1. Heat 2 tablespoons (30 ml) of olive oil in a small pan over medium heat for 3 minutes, then turn off the heat.
  2. Off the heat, whisk in the hot smoked paprika, sweet smoked paprika and cornstarch until no lumps remain.
  3. Reheat the pan over medium heat and slowly whisk in ½ cup (120 ml) vegetable broth. Once all the broth is in, add the white wine vinegar and a small pinch of sea salt, whisk for 2-3 minutes until creamy, then turn off the heat.
  4. Cut the broccoli into florets of similar size, rinse them in a colander, then pat completely dry on a dish towel. Roughly chop the garlic.
  5. Heat 2 tablespoons (30 ml) of olive oil in a large pan over medium heat.
  6. After a couple of minutes, add the florets, toss, and spread them in a single layer. After 2 minutes, toss and spread them in a single layer again.
  7. After another 2 minutes, add the garlic and stir constantly for 30 seconds to 1 minute.
  8. Add ¼ cup (60 ml) vegetable broth and season with sea salt and black pepper. Cover, and lower to low-medium heat.
  9. Cook for 4 minutes, until the broccoli is tender when pierced with a fork.
  10. Transfer the broccoli in a single layer to a serving dish, finely grate the cheese over it.
  11. Whisk the spicy sauce in its pan again, spoon it over the broccoli, and serve.
