Ingredients

Instructions

  1. Boil a large pot of water over medium heat. Add the lobsters and cook for 25 minutes.
  2. Remove the lobsters to a large bowl and let them cool for about 1 hour, until cool enough to handle.
  3. Melt the butter in a medium skillet over medium heat. Add the garlic and cook for about 30 seconds.
  4. Add the salt, paprika and black pepper and cook for 30 seconds. Add the lemon juice and parsley and cook for 1 minute.
  5. Transfer the garlic butter to a heatproof bowl and set aside.
  6. Place the rolls, still attached as one loaf, on a 9x13-inch parchment-lined baking sheet. Cut a 1½-inch square from the center of each roll and remove the bread from inside.
  7. Mix the mozzarella and Parmesan. Divide it among the cut-out squares and around the edges of the bread.
  8. Preheat the oven to 350°F (180°C).
  9. Twist off the lobster tails and claws. Break the claws and knuckles with a rolling pin, remove the meat and discard the shells.
  10. Chop the lobster meat into ½-inch pieces and place in a heatproof bowl. Pour three-quarters of the garlic butter over it.
  11. Spoon the lobster mixture over the cheese in the rolls. Lightly brush the rolls with half of the remaining garlic butter, keeping the rest for later.
  12. Bake for 8 to 10 minutes, until the cheese melts. Brush with the remaining garlic butter and serve.
