Garlic Spaghetti with Fried Eggs | Possibly the BEST Comfort Dish Ever
Ingredients
- Spaghetti8 oz
- Extra virgin olive oil3 tbsp
- Egg2
- Garlic8 cloves
- Paprika · smoked½ tsp
- Manchego cheese2 oz
- Parsley
- Salt
- Black pepper
Instructions
- Fill a stockpot a little over halfway with water, add plenty of sea salt and bring to a high boil.
- Thinly slice the garlic, roughly chop the parsley and finely grate the cheese.
- Once boiling, add the spaghetti and stir. Stir every 2–3 minutes so it does not stick and cooks evenly.
- Meanwhile, heat the olive oil in a large frying pan over medium heat.
- After a couple of minutes, crack in the eggs and cook for 2 minutes, until the whites are set and the yolks are runny. Remove and cover with foil.
- In the same pan over medium heat, add the sliced garlic and stir constantly for 1–2 minutes until lightly browned. Take off the heat and stir in the hot paprika.
- When the pasta is al dente, move it straight from the pot into the garlic pan. Add the cheese, 8 g of chopped parsley, salt and black pepper, and toss well. Add a little pasta water if it looks dry.
- Divide the spaghetti among serving dishes, top each with a fried egg, season the eggs with salt and pepper, sprinkle with parsley and serve immediately.
