Ingredients

Instructions

  1. Wash the zucchini, then thinly slice it with a sharp knife or mandoline, keeping the slices neither too thin nor too thick. Lay them flat and season lightly with salt and pepper.
  2. Heat a drizzle of oil in a large non-stick frying pan over medium heat. Fry the zucchini in a single layer, in 2 to 3 batches, until golden and crispy on one side, then flip and fry the other side.
  3. Drain the fried zucchini on paper towel and keep warm.
  4. In a medium bowl, press or grate the garlic into the mayonnaise. Season with salt, pepper and chopped dill, and mix well.
  5. Preheat the grill to high. Slice the baguette on a slight diagonal, place on a tray, brush the tops with olive oil, and grill for a few minutes until toasted and crispy.
  6. Chop the tomato thinly with a sharp knife.
  7. Spread a generous amount of garlic mayo on each warm toast, top with tomato slices seasoned with salt and pepper, then add 3 to 4 slices of fried zucchini.
  8. Garnish with chopped dill and serve immediately.
