Giant Cinnamon Roll Cake
Ingredients
- Flour2
- Sugar1 ¼ cups
- Salt1 tsp
- Yeast2
- Milk¾ cups
- Butter · softened½ cups
- Egg1
- Brown sugar¼ cups
- Cinnamon · ground1 tbsp
- Heavy cream2 tbsp
- Vanilla1 tsp
Instructions
- Whisk the flour, sugar, salt and yeast together in a bowl and set aside.
- Warm the milk and butter in the microwave until the butter melts and the mixture is 38–43°C (100–110°F).
- Pour the warm milk mixture over the dry ingredients and add the egg.
- Mix until a soft dough forms that pulls away from the bowl sides. If it is very sticky, mix in 2–4 tablespoons of extra flour, keeping the dough soft.
- Knead for 5 full minutes with a stand mixer on dough hook, or by hand on a lightly floured surface. Add 1 teaspoon of flour at a time only if the dough gets too sticky.
- Check the dough: it should still be a little soft and spring back slowly when poked. It is ready when a stretched piece of dough lets light through without tearing; otherwise keep kneading.
- Shape the dough into a ball, cover, and rest for 30 minutes at room temperature.
- Roll the dough into a 15×12-inch rectangle. Spread the softened butter over it, then sprinkle with the brown or white sugar mixed with the cinnamon.
- Grease a 9-inch round pan with butter or nonstick spray.
- Cut the dough into six 2-inch wide strips. Roll one strip up and place it in the centre of the pan. Coil the other five strips around it, joining each to the end of the previous one.
- Cover loosely and let rise in a warm, draft-free spot for 1–2 hours, until doubled in size. On a cold day, heat the oven to 150°F (66°C), turn it off, put the cake inside with the door slightly open, and close the door after about 30 minutes.
- Preheat the oven to 350°F (177°C). Bake for 30–35 minutes until golden brown, tenting with foil if the top or edges brown too fast. Press down any spots that rise too high with the back of a spatula and return to the oven.
- Cool in the pan on a wire rack for 10 minutes.
- Whisk the icing ingredients together, adding more sugar to thicken or more milk or cream to thin, then drizzle over the warm cake.
