- Brown sugar1 ⅓ cups
- Egg1
- Vanilla1 ½ tsp
- Flour2 ½ cups
- Coffee · powder8 tsp + 2 tbsp
- Cinnamon · ground3 tsp
- Baking powder½ tsp
- Baking soda½ tsp
- Salt½ tsp
- Sugar1 cup
Instructions
- Preheat the oven to 350°F (180°C) and line two baking sheets with parchment.
- Beat the butter, vegetable oil and brown sugar in a stand mixer for about 2 minutes until combined. Add the egg and vanilla and whisk about 2 minutes until fluffy and paler.
- Add the flour, espresso, cinnamon, baking powder, baking soda and salt, and mix until just combined.
- Scoop the dough with a 2-tablespoon scoop, spacing the cookies 2 inches apart on the parchment. Use the back of the scoop to press an indent into each cookie.
- For the streusel, combine the flour, brown sugar, butter, espresso and cinnamon in a bowl, rubbing with your fingers until it crumbles together. If it does not hold together, add another tablespoon of flour.
- Top the indents with the streusel and bake for about 15 minutes, until toasty and brown.
- While the cookies bake, mix the powdered sugar, espresso, vanilla and salt in a bowl for the icing.
- Let the cookies cool for 10 minutes after removing them from the oven, then drizzle with the icing and serve right away.
