Ginger Chicken and Rice with mushrooms - fab one pot recipe!
Ingredients
- Oil4 tbsp
- Chicken thigh500 g
- Rice1 ½ cups
- Chicken stock2 cups
- Scallion4
- Ginger1 ½ tbsp + 4–5 slices
- Garlic2
- Shiitake mushroom150 g
- Oyster mushroom150 g
- Mushroom200 g
- Salt
- White pepper0.13 tsp
- Kecap manis3 tbsp
- Fish sauce2 tbsp
Instructions
- Mix the sauce ingredients in a small bowl. Toss the chicken with 1 1/2 tablespoons of the sauce and set the rest aside for drizzling.
- Heat 1 1/2 tablespoons of oil in a large heavy pot on high. Cook half the mushrooms with a pinch of salt and pepper until lightly golden on the surface but not cooked through. Remove to a bowl. Repeat with the remaining mushrooms.
- Heat the remaining 1 tablespoon of oil until hot. Add the chicken and stir for 1 minute, until the surface is sealed but the inside is still raw. Add the white part of the green onions, the garlic and the ginger and stir for 30 seconds. Add the rice and stir briefly to coat in oil.
- Add the stock and ginger slices and bring to a rapid simmer. Scatter the mushrooms over the surface, adding any pooled liquid, and bring to a rapid simmer again.
- Cover, reduce the heat to low (or medium-low on weak burners) and cook for 20 minutes without stirring, until all the liquid is absorbed.
- Remove the pot from the heat with the lid on and rest for 10 minutes.
- Drizzle over the remaining sauce and add the green parts of the green onions. Toss gently until the green onion is mostly wilted, then serve.
