🤤 Ginger Scallion Noodles: MY FAVORITE NOODLE DISH EVER (薑蔥撈麵)
Ingredients
- Egg noodle12 oz
- Ginger2 oz
- Scallion3 oz
- Bok choy8 oz
- Oil11 tsp
- Chicken broth8 oz
- Salt1 tsp
- Sugar½ tsp
- Oyster sauce1 tbsp
- Cornstarch1 tbsp
- Sesame oil1 tsp
Instructions
- Cut the ginger into thin slices, then into fine strips. Cut the green onion into 2-inch sections, slice each section lengthwise, then cut into thin strips.
- Cut each bok choy into quarters (or halve smaller ones) and check that it is clean.
- Mix the chicken broth, salt, sugar and oyster sauce in a small bowl for the sauce.
- Boil water on high heat with oil added. Blanch the bok choy for 70 to 80 seconds until bright green and slightly soft, then plunge into cold water, drain and set on a plate.
- Loosen the noodles, then cook them in the same pot in batches for 30 seconds, stirring to prevent clumping.
- Drain the noodles, dip briefly in cold water for about 5 seconds, drain again, then toss with oil and arrange in a serving dish.
- Arrange the bok choy around the edge of the dish over the noodles.
- Heat oil in a wok on high. Lower to medium, add the ginger and cook about 10 seconds until aromatic. Raise to high, add the green onion and cook 50 to 60 seconds.
- Stir the pre-mixed sauce, add to the wok and stir. Taste and adjust.
- Turn the heat to low. Mix the cornstarch and water until smooth, then drizzle into the sauce on medium heat, stirring, until it reaches the desired thickness.
- Raise the heat to high and stir for about 30 seconds. Turn off the heat and stir in the sesame oil.
- Pour the sauce over the noodles just before serving and enjoy.
