Preparación

  1. Put the butter, syrup, ground ginger, ground cinnamon and brown sugar in a small saucepan.
  2. Melt them together over medium heat, stirring now and then. Remove from the heat once the butter has fully melted.
  3. Add the flour, the butter mixture and the milk to a large bowl and fold together with a wooden spoon or stand mixer. The dough will be very stiff but sticky.
  4. Cover the bowl and chill the dough in the fridge for 3-4 hours or overnight until firm.
  5. Take the dough out. Sandwich about one cup of it between two sheets of non-stick paper and roll to 1-1.5 cm (1/2-1/4 inch) thick.
  6. Cut out the pieces from the printed template with scissors, then trim them to shape with a knife. Repeat until all pieces are cut.
  7. Chill the pieces in the fridge for 30 minutes so they keep their shape in the oven.
  8. Bake at 180°C / 350°F for 15-20 minutes, until the edges just start to brown. Bake in batches if needed.
  9. While the pieces bake and cool, beat the egg whites and powdered sugar on medium speed for 5-8 minutes until thick and bright white. Cover the bowl so it does not dry out.
  10. Fill a piping bag fitted with a small round nozzle with the royal icing and decorate the flat pieces.
  11. Leave the decorated pieces for about 6 hours until fully hardened.
  12. Pipe icing along the edges of the four walls, join them and support with cups or tins until the icing dries for about 4 hours.
  13. Add the roof, then the chimney, piping icing on each side and joining them carefully.
  14. Pipe remaining icing on the base as snow, add cinnamon sticks as logs, and dust with powdered sugar.
