Gluten-Free Cauliflower Flatbread 7 Ingredient! Grainfree Nutfree
Ingredients
- Cauliflower1 cup
- Psyllium husk2 tbsp
- Chickpea flour½ cups
- Tapioca starch¼ cups
- Baking powder¼ tsp
- Salt⅓ tsp
- Oregano½ tsp
- Garlic powder¼ tsp
- Oil1 tsp
Instructions
- Drain the cauliflower and blend it with 2 tablespoons water into a smooth puree. A small blender works, or mash very well with the water.
- Put the puree in a bowl. Rinse the blender with 1 tablespoon water and add that to the bowl too.
- Add the psyllium to the bowl, mix, and let it sit for a minute until it gels. It should stiffen into a dough-like gel; if it does not thicken, the flatbread will not work.
- Add the remaining dry ingredients and mix well. Add the oil, then work it in with greased hands to form a dough. Add another tablespoon or more of chickpea flour if needed.
- Divide the dough and shape it into balls, using a little flour or oil on your hands if needed. Roll each ball into a flatbread about 6 inches across, using chickpea or rice flour.
- Heat a thick-bottomed skillet over medium heat. Cook the flatbreads 2-3 minutes per side, until golden brown spots appear, pressing them with a spatula as they cook.
- Keep the cooked flatbreads covered with a towel until serving.
