Gobi Paratha (Cauliflower Paratha)
Ingredients
- Flour2 cups
- Oil1 tsp
- Ghee3 tbsp
- Cauliflower450 g
- Chili pepper1–2
- Cilantro3–4 tbsp
- Salt½–¾ tsp
- Turmeric¼ tsp
- Chili powder¾ tsp
- Garam masala¾–1 tsp
- Cumin · roasted powder¾ tsp
- Ginger powder · dried¼ tsp
- Chaat masala1 tsp
- Fenugreek½ tbsp
- Carom seed¼ tsp
Instructions
- Grate the cauliflower florets into rice-sized pieces with a medium grater, then pat dry if wet.
- Preheat the oven to 430°F (220°C) for 15 minutes. Spread the gratings on 2 trays and bake for 10 minutes, stir, then bake another 10 minutes or as needed, until still crunchy and not soft. Remove the bottom tray early if needed. Cool completely.
- Knead the flour, water and oil into a soft, non-sticky dough, adding water as needed. Cover and rest.
- Once the cauliflower is cool, mix in the remaining filling ingredients, then taste and adjust the salt.
- Divide the dough into 8 equal portions and roll into smooth balls, keeping them covered.
- Dust a ball with flour, flatten it and roll to a 4-inch disc. Place 3-4 tablespoons of filling in the centre, pull the edges up and seal, flatten gently, then roll to a 6-7 inch paratha.
- Heat a pan to medium-hot, dust off excess flour and cook the paratha until bubbles form. Flip, spread ghee over the top, flip again and press with a spatula to help it puff.
- Cook both sides until golden spots appear, including the edges. Wipe the pan clean between parathas.
