- Onion · finely chopped1
- Garlic · roughly chopped2 cloves
- Parsley · chopped2 tbsp
- Thyme · dried½ tsp

Instructions
- In a large bowl, whisk the egg, then whisk in the milk until fully combined. Slowly add the flour while whisking constantly until smooth and creamy. Finish by whisking in the baking powder.
- Add the chopped onion, garlic, parsley and thyme to the batter. Finely grate in the zest of 1/2 lemon, avoiding the white pith. Season with sea salt and black pepper and mix well.
- Drain and rinse the artichoke hearts, then pat them completely dry on paper towels. Cut into small bite-sized pieces and gently fold into the batter.
- Heat the olive oil in a large frying pan over medium heat.
- When the oil is hot, drop spoonfuls of batter into the pan in a single layer, spaced apart, cooking in batches. Fry 4 to 5 minutes per side, until golden all over.
- Transfer each finished batch to a dish lined with paper towels. When all are cooked, arrange on a serving dish and serve with lemon wedges.
