Got Canned Sardines? Make these CRISPY Sardines with Tomato Sauce
Ingredients
- Extra virgin olive oil6 tbsp
- Olive oil2 cans
- Flour½ cups
- Egg1
- Breadcrumb1 cup
- Garlic powder1 tsp
- Parsley · dried2 tsp
- Salt
- Black pepper
- Garlic3 cloves
- Paprika · smoked1 tsp
- Tomato sauce1 can
- Lemon · chopped
Instructions
- Make the tomato sauce: warm the olive oil in a saucepan over medium heat. After a couple of minutes add the chopped garlic and stir constantly. After 30 seconds stir in the paprika, then add the tomato sauce and parsley, season with salt and pepper, mix, and lower to low heat to simmer.
- Drain the sardines gently into a fine sieve set over a bowl, taking care not to break them up.
- Put the flour in one shallow bowl. Crack the egg into another shallow bowl, add the water and salt and pepper, and whisk. Put the breadcrumbs in a third shallow bowl and mix in the garlic powder and parsley.
- Heat the olive oil in a large frying pan over medium heat.
- While the oil heats, coat each sardine in flour, then in the egg mixture, then in the breadcrumbs, handling them gently.
- When the oil is hot, add the sardines in a single layer and fry for 2 minutes per side, or until golden and crispy. Transfer to a dish lined with paper towels.
- Spoon the simmering tomato sauce into a shallow bowl set on a serving dish, arrange the crispy sardines around it, and garnish with lemon wedges and chopped parsley.
