Got Canned Sardines? Make these Spanish-Style Fried Sardines
Ingredients
- Extra virgin olive oil5 tbsp
- Olive oil2 cans
- Flour⅓ cups
- Egg2
- Parsley · chopped1 tbsp
- Mayonnaise½ cups
- Garlic2 cloves
- Lemon1 tsp + 1
- Salt
- Black pepper
Instructions
- Heat a large frying pan over medium heat and add the olive oil.
- Gently drain the sardines through a fine sieve over a bowl, and shake off excess oil without breaking them.
- Crack the eggs into a bowl, add the parsley, season with salt and pepper and whisk. Put the flour in a separate bowl.
- Coat each sardine first in flour, then in the egg mixture. Fry them in a single layer in batches so the pan is not crowded, for 2 minutes per side or until golden. Move each batch to a dish lined with paper towel.
- For the garlic aioli, put the mayonnaise in a bowl, finely grate in the garlic, squeeze in the lemon juice, add the olive oil and a light pinch of salt and pepper, and whisk until creamy.
- Spoon the aioli into a serving dish, arrange the fried sardines around it, and garnish with lemon wedges.
