Got Canned Sardines? Make these Spanish-Style Sardine Fritters
Ingredients
- Flour½ cups
- Egg1
- Sparkling water½ cups
- Shallot · finely chopped1
- Garlic · roughly chopped4 cloves
- Parsley · chopped2 tbsp
- Lemon1 + 1 tsp
- Olive oil1 can
- Salt
- Black pepper
- Saffron¼ tsp
- Mayonnaise½ cups
- Extra virgin olive oil5 tbsp
Instructions
- Put the flour in a large bowl, make a well in the middle and crack in the egg, whisking it. Gradually whisk in the sparkling water to make a smooth batter.
- Stir in the shallot, garlic and parsley, season with sea salt and black pepper, grate in the zest of half a lemon and mix well.
- Drain the sardines through a fine sieve over a bowl, gently break them apart, then add them to the batter and mix well.
- Heat a large frying pan over medium heat and add the olive oil.
- After a couple of minutes, drop spoonfuls of batter into the pan in a single layer, spaced apart, working in batches. Fry for 3 minutes per side or until golden, then drain on paper towels.
- Once all the fritters are cooked, make the aioli: pound the garlic with the saffron and a pinch of sea salt in a mortar with a pestle to a paste.
- Whisk in the mayonnaise, lemon juice and olive oil, season lightly with sea salt and black pepper, and whisk until creamy.
- Spoon the aioli into a serving dish, arrange the fritters around it and garnish with fresh parsley.
