Got Frozen Shrimp? Make this EASY One-Pan Shrimp and Rice Dinner
Ingredients
- Extra virgin olive oil2 tbsp
- Onion1
- Garlic5 cloves
- Rice1 cup
- Oregano · dried1 tsp
- Thyme · dried½ tsp
- Paprika · smoked½ tsp
- Shrimp · frozen peeled1 bag
- Salt
- Black pepper
- Parsley
Instructions
- Heat a large frying pan over medium heat and add the olive oil.
- While the oil heats, roughly chop the onion and thinly slice the garlic.
- Add the onion and garlic to the hot pan and stir, then keep stirring every 1–2 minutes so they saute evenly.
- Rinse the rice in a fine sieve under running water for 1–2 minutes, until the water runs clear underneath.
- When the onion is translucent (after 5–6 minutes), add the rinsed rice, oregano, thyme and paprika, season generously with sea salt and black pepper, and mix quickly. Add the water, raise to high heat and stir gently. Once it boils, cover and lower to low heat.
- Pat the shrimp completely dry on paper towels, arrange in a single layer, and season with sea salt and black pepper.
- After the rice has simmered for 10 minutes, remove the lid, arrange the shrimp in a single, evenly spaced layer on top, cover and keep simmering until the rice is cooked and the shrimp are cooked through.
- Remove from the heat and rest, covered, for a couple of minutes. Uncover, fluff the rice gently with a fork, and serve from the pan or in dishes, garnished with parsley.
