Ingredients

Instructions

  1. Thinly slice the onions. Thinly slice the green onions, keeping the whites and greens separate.
  2. In a small container, mix all the sauce ingredients well and set aside.
  3. Heat the oil in a large pot or pan over medium-high heat. When hot, add the ground beef and spread it evenly. Sear 1 to 2 minutes, until the bottom is golden brown.
  4. Flip the beef, break it up, and sauté 3 minutes, until cooked and most of the liquid has evaporated. If there is too much fat, remove some with paper towels.
  5. Add the white parts of the green onions and the onions. Sauté 5 minutes, until softened and translucent. If using lean beef with too little fat, add a little more neutral oil.
  6. Pour in the sauce, stir, and scrape the bottom of the pot to lift the flavour.
  7. When the sauce boils, reduce the heat to medium-low, cover, and simmer 5 minutes.
  8. Divide the rice among bowls and top generously with beef and onions. Use only a light amount of sauce. Add a fried or soft-boiled egg if you like.
  9. Spoon 1 to 2 tablespoons of broth over the top to taste. Finish with pickled ginger if using, and the green onion greens.
