Instructions

  1. Rinse the rice several times, drain it, then soak it in cold water for 30 minutes.
  2. Mix 2 cups of water with the soy sauce, mirin and Korean beef stock powder and set aside.
  3. Thinly slice or quarter the mushrooms, finely chop the garlic, and slice the green onions, keeping the whites and greens separate.
  4. Heat 2 tablespoons of oil in a large nonstick pot over medium-high heat. Add the ground beef, spread it out, season with a pinch of salt, and sear for 2 minutes until the bottom is golden. Flip, break it up, and cook for 1 minute.
  5. Add the garlic and the white parts of the green onions and sauté for 3 to 4 minutes. Remove the beef and set aside.
  6. In the same pot, add 2 tablespoons of oil, the mushrooms and a pinch of salt. Sauté for 3 to 4 minutes until most of the moisture has evaporated, then for another 3 to 4 minutes until nicely browned.
  7. Return the beef to the pot with the drained rice and stir for 30 seconds.
  8. Pour in the seasoned water, bring to a boil, stirring occasionally and scraping up browned bits from the bottom.
  9. Reduce the heat to low, cover and simmer for 15 minutes. Turn off the heat, keep the lid on and let it steam for 10 minutes.
  10. Add the green onion greens and a pat of butter, fluff the rice gently and mix everything together.
