- Garlic3 cloves
- Ginger1 tsp
- Scallion3
- Vegetable oil3 tbsp
- Salt
- Ground beef1 lb
- Toasted sesame oil½ tbsp
- Soy sauce3 tbsp
- Oyster sauce1 tbsp
- Sugar1 ½
- Chicken stock · powder1 tsp
- Dark soy sauce½ tsp
- Shaoxing wine2 tbsp
- Black pepper
- Cornstarch1 tbsp
Instructions
- Cut the potatoes and bell peppers into small bite-sized cubes. Finely chop the garlic. Grate about 1 teaspoon of ginger. Thinly slice the green onions, keeping the whites and greens separate.
- Mix all the sauce ingredients in a small container and set aside.
- Heat 2 tablespoons of oil in a large wok over medium-high heat. Add the potatoes with a pinch of salt and sear for 8 minutes, until golden brown and cooked through. Remove and set aside.
- In the same wok, heat 1 tablespoon of oil over high heat. Add the ground beef, spread it evenly, and sear for 1 to 2 minutes until the bottom is browned.
- Flip the beef, break it up, and stir-fry for 3 minutes, stirring constantly to evaporate most of the liquid and render the fat.
- Add the garlic, ginger and white parts of the green onions and sauté for 1 to 2 minutes over medium-high heat.
- Add the potatoes and bell peppers and stir-fry for 1 minute until coated in oil.
- Stir the sauce, pour it in and toss for 1 minute. Turn off the heat, add the sesame oil and mix. Transfer to a plate, top with the green onion greens and serve with hot rice.
