Instructions

  1. Rinse the rice until the water runs clear, drain, and repeat two or three times. Soak it in cold water for 30 minutes before cooking.
  2. Finely chop the garlic (or slice thinly). Slice the green onions, keeping the white and green parts separate.
  3. In a container, combine 2 cups of water, the soy sauce, mirin and Korean beef stock powder. If you don't have the stock powder, skip it or use 1 teaspoon of fish sauce or chicken bouillon powder.
  4. Heat the oil in a heavy-bottomed pot over medium heat. Add the ground beef, season lightly with salt, spread it out and cook undisturbed for 2 minutes until the bottom is golden.
  5. Break up the beef and stir for 1 minute. Add the garlic and the white parts of the green onions and sauté 3–4 minutes until the beef is cooked. Remove the beef, leaving the oil in the pot.
  6. Add the drained rice and stir-fry gently for 1 minute, coating every grain in the oil.
  7. Add the seasoned water and bring to a boil, stirring occasionally so nothing sticks or burns.
  8. When it boils, reduce the heat to low. Top the rice with the cooked beef, cover with a lid and simmer for 15 minutes.
  9. Turn off the heat, keep the lid closed and let the rice steam for another 10 minutes.
  10. Open the lid, add the green parts of the green onions and fluff the rice gently. Serve as is, or top with a raw egg yolk, a pat of butter or a drizzle of toasted sesame oil, and mix well.
