Ingredients
- Garlic5 cloves
- Scallion2–3
- Cucumber1
- Noodle6 oz
- Butter4 tbsp
- Parmesan cheese · grated¼ cups
- Black pepper
- Lemon
- Chili oil
- Miso3 tbsp
- Oyster sauce1 tbsp
- Chicken stock · powder1 tsp
- Mirin1 tbsp
Instructions
- Finely chop or thinly slice the garlic. Thinly slice the green onions, keeping whites and greens separate. Cut the cucumber into thin matchsticks.
- In a small container, mix all the seasoning paste ingredients well and set aside.
- Bring a pot of water to a boil. Add the noodles and cook until al dente, without salting the water. Reserve 1/2 cup of the pasta water.
- Meanwhile, melt the butter in a large pan over medium-high heat. Add the garlic and the white parts of the green onions and sauté for 1 minute, until the garlic just turns lightly golden.
- Lower the heat to low. Add the seasoning paste and stir for 1 minute. Add 1/2 cup of pasta water and simmer for 1 minute, until well combined.
- Add the noodles straight into the sauce, then add 1/4 cup Parmigiano-Reggiano and a few shakes of black pepper. Toss to combine.
- Divide among bowls and top generously with the julienned cucumber and green onion greens. Serve with lemon wedges or chili oil if you like.
