Got Miso? Try This 15-Minute Miso Garlic Chicken Rice That Will Change Your LIFE!
Ingredients
- Garlic3 cloves
- Scallion2
- Chicken thigh · boneless1 lb
- Vegetable oil1 tbsp
- Rice · cooked4 cups
- Cucumber
- Cherry tomato
- Lemon
- Miso2 tbsp
- Soy sauce½ tbsp
- Oyster sauce½ tbsp
- Mirin3 tbsp
- Sugar1 tsp
- Olive oil1 tbsp
- Black pepper
Instructions
- Finely chop the garlic and thinly slice the green onions if using.
- In a small container, mix the chopped garlic with all the marinade ingredients and set aside.
- Pour the marinade over the chicken and massage it in. For best flavour, marinate for at least 3 to 4 hours or overnight.
- Heat the oil in a large nonstick pan over medium heat until hot. Place the chicken skin-side down and sear for 4 minutes, or until the bottom is golden brown. Press gently with a spatula for even browning.
- Flip the chicken and cook for another 4 to 5 minutes, or until cooked through. Keep the heat at medium or medium-low so the miso does not burn.
- Remove the chicken and rest for a few minutes. Once cool enough to handle, slice into bite-sized pieces.
- Divide the rice among serving bowls. Top with the chicken, sliced cucumber, cherry tomatoes and lemon wedges, then sprinkle with green onions if using.
