- Vegetable oil2 tbsp
- Sesame seed · toasted
- Chili pepper · flakes2 tbsp
- Soy sauce½ tbsp
- Oyster sauce1 tbsp

- Cut the zucchini into thin matchsticks (a mandoline can help). Thinly slice the onion and green onions, keeping white and green parts apart. Finely chop the garlic.
- In a small container, mix all the seasoning paste ingredients well and set aside.
- Boil water and cook the noodles per the package instructions. Drain into a mixing bowl, add 2 tbsp soy sauce and 1 tbsp sesame oil, toss well and set aside.
- Heat the oil in a pan over medium-high heat. Add the onion, white green onion parts and garlic, and sauté for 2 minutes, until the onion softens and turns translucent.
- Add the zucchini and stir-fry for 1 minute. Add the seasoning paste and stir-fry for 2 more minutes, until chili oil shows here and there. Turn off the heat and stir in the remaining 1/2 tbsp sesame oil.
- Divide the noodles among bowls, top generously with the zucchini stir-fry, and sprinkle with sesame seeds and green onions.
