Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Finely chop the garlic cloves, then the parsley leaves, then the quartered onions in batches in a food processor.
  3. Put the chopped onion, parsley and garlic in a large bowl with the remaining meatball ingredients and mix well.
  4. Shape into balls or sausages and place on a baking tray.
  5. Heat olive oil in a cast-iron skillet and pan-fry the meatballs 3-4 minutes per side until golden. Transfer to a baking dish.
  6. For the sauce, warm olive oil and the grated garlic clove in a small saucepan for a few seconds, then add the pureed tomatoes.
  7. Season with salt, pepper, cumin and sugar, add the bay leaf and simmer over medium heat for about 15 minutes until thickened. Taste and adjust seasoning, then stir in the dried oregano.
  8. Pour the sauce over the bottom of the baking dish and arrange the meatballs on top.
  9. Bake on the center rack for about 30 minutes.
  10. While the meatballs bake, peel the potatoes, cut into 2-inch cubes, and cover with cold water in a pot. Add a teaspoon of salt, bring to a boil and cook until fork-tender, about 8-10 minutes. Drain.
  11. Press the potatoes through a ricer into a bowl. Gradually mix in the hot half and half and melted butter, then season with salt, pepper and roasted garlic puree. Mix well and adjust seasoning to taste.
