- Zucchini3
- Flour1 cup
- Semolina flour · finely ground1 cup
- Saltto taste
- Oregano · driedto taste
- Vegetable oil
- Sumac
- Tzatziki
- Shawarma Sauce
- Marinara sauce
Instructions
- Slice the zucchini into 3 mm rounds or sticks and sprinkle lightly with salt. Leave them to rest while you make the coating.
- Heat vegetable oil in a deep pan to 375°F.
- In a shallow dish, mix the semolina flour, all-purpose flour and 1 teaspoon of salt.
- Toss the zucchini in the flour mixture without patting them dry first; the moisture they released helps the coating stick.
- Quickly dip each piece in water, shake off the excess, and carefully drop into the hot oil in batches so the pan is not crowded.
- Fry until golden all over.
- Lift the pieces out with a slotted spoon or spider and let excess oil drip back into the pan.
- Drain on paper towels and season with salt, oregano and sumac or other chosen seasonings. Serve right away.
