Ingredients

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Put the bulgur and flour in a large bowl, pour over 2 cups of boiling water, drizzle in 1–2 tablespoons of olive oil and mix. Cover and leave for 1 hour to soak up the liquid and soften.
  3. Cook the onions with the olive oil over medium heat until soft and golden. Move half of the onions to the bulgur mixture.
  4. Add the garlic to the remaining onions in the pan and warm for about 20 seconds.
  5. Add 1 pound of ground beef and sauté until lightly browned.
  6. Season with salt, pepper and cumin, and add the nuts. Cook over medium heat for 10 minutes, until the meat is cooked through. Adjust the seasoning to taste.
  7. Stir in the herbs and set the filling aside.
  8. Season the bulgur mixture and mix well, adjusting the seasoning if needed.
  9. Knead the raw ground beef with ½ teaspoon of salt and some black pepper into the bulgur until combined and holding together.
  10. Press half of the mixture over the base and up the sides of a 10-inch round deep-dish pie pan (3 inches deep).
  11. Spread the meat filling in the centre, cover with the remaining bulgur mixture and press lightly.
  12. Brush the top with olive oil, sprinkle lightly with salt, and score into diamonds or 8 pieces.
  13. Bake on the centre rack for 1 hour or until golden. Run the broiler for a few minutes to crisp the top.
  14. Let the pie set for at least 20 minutes before serving with tahini sauce or tzatziki.
