Greek Olive Oil Cookie Sticks | The Easiest Way to Make Ladokouloura
Ingredients
- Olive oil1
- Orange juice¾ cups
- Sugar1 cup
- Vanilla1 tsp
- Orange
- Cinnamon · ground1 tsp
- Clove · ground¼ tsp
- Baking soda½ tsp
- Baking powder1 tsp
- Flour4 cups + ½–1 cup
- Walnut · ground¾ cups
- Sesame seed · for topping
Instructions
- Preheat the oven to 350°F. Line two large baking sheets with parchment paper.
- In a large bowl, whisk together the olive oil, orange juice, sugar, vanilla, orange zest, cinnamon and cloves until the sugar starts to dissolve.
- Whisk in the baking soda and baking powder.
- Gradually add the 4 cups of flour, mixing gently after each addition. Add enough of the extra flour to make a soft dough that is not very sticky.
- Fold in the ground walnuts. Do not overmix or knead, or the cookies will be tough.
- Cover the dough and let it rest for about 20 minutes.
- Divide the dough in half. Roll each half between two sheets of parchment into a rectangle about 12 by 8 inches and ½ inch thick.
- Peel off the top parchment, sprinkle generously with sesame seeds and press them gently into the dough.
- Cut each rectangle into sticks about 1 inch wide and 4 inches long.
- Transfer the sticks to the baking sheets, leaving about 1 inch between them.
- Bake for about 25 minutes, until the edges and bottoms are lightly golden.
- Cool on the sheets for 5 minutes, then move to a rack. They crisp up as they cool.
