Green Banana Curry (Plantain Curry)
Ingredients
- Banana2
- Oil2 tbsp
- Curry1 sprig
- Mustard seed½ tsp
- Cumin½ tsp
- Asafoetida1 pinch
- Chili pepper1
- Turmeric0.13 tsp
- Salt¼–⅓ tsp
- Onion1 cup
- Tomato¾ cups
- Garlic · paste1 ½ tsp
- Chili powder1 tsp
- Garam masala1 tsp
- Coriander seed · powder½ tsp
- Cilantro2 tbsp
Instructions
- Wash and peel the green bananas, removing all the inner skin. Dice them and keep in water.
- Steam the diced banana until just tender, about 10 to 12 minutes on medium heat; or boil them in an open pot with 1½ cups water. Do not let them turn mushy.
- Heat the oil in a pan. Add cumin and mustard seeds and wait until they sizzle.
- Add asafoetida, curry leaves, onions and green chilies. Sauté until the onions are completely golden.
- Add ginger garlic paste and fry until the raw smell goes.
- Add tomatoes, salt and turmeric. Sauté until the tomatoes are mushy.
- Add red chili powder, garam masala and coriander powder. Sauté for 2 to 3 minutes.
- Pour in half a cup of hot water (or the plantain cooking water) and stir. Cook until it becomes a thick gravy.
- Taste and adjust the salt. Add the steamed plantain and stir well.
- Cover and cook on very low heat for 3 to 4 minutes until fork tender but not mushy. For a drier curry, cook 2 to 3 minutes more to evaporate the water.
- Taste and adjust salt and spices. Stir in the coriander leaves and turn off the heat.
