- Dark soy sauce2 tbsp

- Chili flake · flakes1 tsp

- Chili pepper · thinly sliced1
- Cilantro · chopped2 tbsp
- Red onion · peeled finely sliced¼
- Peanut · roasted roughly chopped1 tbsp

Instructions
- Soak 10 wooden skewers in water for 30 minutes so they don't burn.
- Toss the sliced steak with the vegetable oil, dark brown sugar and fish sauce, massaging the sauce in for one minute. Cover and marinate at room temperature for 30 minutes (or refrigerate for longer, up to overnight).
- Whisk all the basting sauce ingredients together in a bowl and set aside.
- Put all the satay sauce ingredients except the lime juice into a small pan.
- Heat over medium, stirring with a wooden spoon. As it nears boiling, lower the heat so it does not boil, and stir until thick. Take off the heat and stir in the lime juice.
- Drain the skewers, shake off excess water, thread the steak strips onto them, set on a plate and brush with basting sauce.
- Heat a griddle or barbecue until very hot. Cook the skewers for 5-6 minutes until golden brown, turning a couple of times and basting generously each time. It will smoke a lot, so open the windows.
- Reheat the satay sauce if you like it hot. Serve it in a bowl with the skewers, topped with coriander, sliced red chilli, and optionally chilli flakes, red onion, chopped peanuts and sesame seeds.
