Grilled Chicken and Sausage Pasta Jambalaya
Ingredients
- Chicken breast3
- Smoked sausage · halved1
- Bacon3 pieces
- Bell pepper · diced1 cup
- Onion · diced1
- Scallion · chopped, for garnish2
- Garlic · minced4 cloves
- Penne · cooked8 oz
- Alfredo sauce1 jar
- Chicken½ tsp
- Cajun seasoning2 tbsp
Instructions
- Prepare a charcoal grill for direct cooking. Season the chicken breasts with half of the Cajun seasoning.
- Grill the sausage halves until they reach 165°F (about 3 minutes per side). Grill the chicken 4 to 5 minutes per side until it reaches 165°F. Loosely cover the meat with foil and rest it.
- Bring a large pot of water to a boil over medium-high heat. Add a pinch of salt, cook the penne for 7 to 8 minutes, then drain, reserving 1/2 cup of the pasta water.
- In a large sauté pan over medium heat, brown the chopped bacon. Drain it on paper towels, leaving 1 tablespoon of fat in the pan.
- Return the pan to medium heat and sauté the peppers, onion and garlic for 4 to 5 minutes, until tender.
- Stir in the chicken base and add the reserved pasta water 1/4 cup at a time, scraping up any bits from the pan. Add the Alfredo sauce and 1 tablespoon of Cajun seasoning, reduce the heat and simmer 2 to 3 minutes. Add the pasta.
- Cut the sausage and chicken into bite-sized pieces, add them to the pan, and top with the bacon and green onions.
