Instructions
- Put all the marinade ingredients (not the chicken) in a large bag or bowl and whisk well. Add the chicken and coat it evenly. Cover and marinate in the fridge for at least 30 minutes, or up to 4 hours.
- While the chicken marinates, toss the edamame, cucumbers, carrot, scallions, rice vinegar, soy sauce, sesame oil and garlic in a large bowl. Refrigerate until serving.
- Take the chicken out of the fridge and let it stand at room temperature for 20 minutes.
- Preheat the grill to 425°F and scrape off any stuck bits from the grates.
- While the grill heats, whisk the peanut butter, soy sauce, lime juice, ginger, garlic, honey, sriracha and water together in a small bowl. Set aside.
- Grill the chicken with the lid closed until a meat thermometer in the centre reads 165°F, about 7 to 8 minutes per side. Rest it on a cutting board for at least 5 minutes, then cut into bite-sized chunks.
- Serve rice in shallow bowls, add chicken and salad, drizzle with the peanut sauce, and top with peanuts, cilantro and scallions.
