Grilled Portobello Mushrooms with Garlic Sauce
Ingredients
- Portobello mushroom2
- Garlic8 cloves
- Balsamic vinegar2 tbsp
- Extra virgin olive oil4 tsp
- Smoked paprika¾ tsp
- Soy sauce2 tsp
- Lemon5 tsp
- White wine1 tbsp + 1–2 tbsp
- Generous dash of salt and pepper1
- Oil1 tsp
- Onion1
- Cashew¼ cups
- Arrowroot starch or use flour1 tbsp
- Nutritional yeast1 tbsp
- Salt½ tsp
- Black pepper · chopped
Instructions
- In a shallow dish, mix the marinade ingredients. Place the portobello mushrooms in the dish, brush the marinade over them and leave for 10 to 15 minutes.
- Heat a grill or heavy pan over medium heat and oil it. Place the mushrooms on the pan, partly covered, and cook for 3 to 4 minutes per side. Thin mushrooms will cook through in this time. If they are thick, bake at 400°F for 15 minutes or until a knife goes through easily.
- To bake without grilling, bake the marinated mushrooms in the shallow dish for 25 to 30 minutes.
- Heat 1 teaspoon oil in a skillet over medium heat. Add the onion, the garlic and a pinch of salt, and cook until translucent.
- Transfer half the onion and garlic mixture to a blender. Add the remaining sauce ingredients and blend until smooth, in 1-minute bursts so the cashews blend fully.
- Pour the blended sauce back into the skillet with the remaining onion and garlic, and cook over medium heat until thickened. Taste and adjust salt and flavor.
- Spoon the sauce generously over the mushrooms and garnish with fresh basil and black pepper.
