- Onion1
- Celery2–3 stalks
- Garlic6
- Canned tomato · diced1 cup
- Olive oil⅓ cups
- Rice1 ½ cups
- Black pepper · ground1 tsp
- Salt2 tsp
- Smoked paprika · ground dried1 tsp
- Cilantro · chopped½ cups
- Chicken broth2 cups
- Lime2–3
Instructions
- Prepare the vegetables: slice the bell pepper and celery, dice the onion and finely mince the garlic. Put them in a large bowl with the diced tomatoes, rice and oil.
- Slice the sausage into small rounds, cut the chicken into bite-sized pieces and add both to the bowl.
- Season with 1/3 cup fresh cilantro, salt, pepper and all the spices, and toss until evenly mixed.
- Cut six 16-inch sheets of heavy duty foil and lay them flat.
- Divide the jambalaya evenly among the sheets, about 2 cups of filling in the centre of each.
- Make a small lip along the length of each sheet, then pour 1/3 cup chicken broth into each packet.
- Bring the long sides up over the food, double fold the ends, leaving room inside for heat, then double fold the short ends to seal.
- Place the packets on a large baking sheet.
- Preheat the grill to 550°F for 10 to 15 minutes until the grates are hot.
- Place the packets on the grates seam side up, spaced apart, and grill with the lid closed for about 28 minutes, turning them every 6 to 7 minutes.
- To check, open one packet carefully with tongs; if the rice is not cooked, reseal and keep cooking.
- Remove the packets and rest them 5 to 7 minutes, then open carefully and shape the foil into a bowl.
- Toss the rice, meat and sausage together, squeeze lime juice over and top with extra cilantro.
