Ingredients

Instructions

  1. Roast the peanuts in a dry skillet over medium heat for 5 to 10 minutes, stirring now and then.
  2. Wash the beef well and put it in a pot with 2 cups of water, half a teaspoon of salt, one stock cube and a tablespoon of chopped onion.
  3. Cook on medium-high for about 20 minutes, adding water as needed, until the meat is tender.
  4. When the peanuts are browned with dark spots, turn off the heat and let them cool completely, then grind to a powder or paste. Use a coffee grinder if you have one.
  5. Blend the ground peanuts with 1 cup of water into a smooth paste.
  6. Blend the garlic, ginger and habanero pepper (if using) together.
  7. Put the beef and its stock into a bowl. Return the pot to the heat to dry out the remaining stock.
  8. Add oil and heat it, then fry the onions until fragrant.
  9. Add the tomatoes and fry until they no longer taste sour.
  10. Add the blended garlic and ginger mixture (and pepper), the beef and stock, the peanut paste, the seasoning cubes and half a teaspoon of salt. Mix well and simmer for 5 to 10 minutes.
  11. Taste the soup, adjust the seasoning and the consistency, then serve warm over rice, boiled plantains or fufu.
