Gut-healthy salsa?! 馃崊
Ingredients
- Tomato 路 finely chopped2
- Bell pepper 路 finely chopped1
- Red onion 路 finely chopped1
- Garlic 路 minced3
- Jalape帽o chili 路 seeded finely chopped1
- Lime 路 juiced1 陆
- Cilantro 路 finely chopped戮 cups
- Salt1 tbsp
- Chili powder陆 tsp
- Cumin 路 ground陆 tsp
Instructions
- Put all the ingredients in a large bowl.
- Stir until the salsa starts to release some of its juices.
- Transfer to a 1-litre jar and pack the vegetables down as firmly as possible. Use a clean, non-metallic jar.
- Place a fermenting weight on top so all the vegetables stay under the brine. If needed, add a little water to cover them. If you have no weight, a large slice of bell pepper can press the salsa down.
- Close the lid and let it ferment on the counter for 2 days. Open the lid once a day to release gas and check for bubbles. Keep all vegetables under the brine, as anything above it can grow mould.
- Taste often. When it suits you, move the jar to the fridge. In a very warm room, fermenting may take as little as 1 day.
