Guy Fieri's 5-Star Grilled Beer Brats with Peppers & Onions
Ingredients
- Canola oil2 tbsp
- Bacon · smoked diced6
- Onion · sliced1
- Bell pepper · seeded sliced2
- Garlic · minced2 cloves
- Beer
- Chicken stock1 cup
- Thyme2 sprigs
- Bay leaf1
- Rosemary1 sprig
- Bratwurst sausage2 lb
- Mustard½ cups
- Butter2 tbsp
- Salt
- Black pepper · ground
- Parsley · chopped2–3 tbsp
Instructions
- Heat the oil in a large deep pan or Dutch oven over medium-high heat. Add the bacon and cook 3 to 5 minutes until browned and crispy.
- Add the onion, green and red peppers and garlic, and cook 4 to 5 minutes, until the peppers are wilted and lightly browned.
- Add the beer, chicken stock, thyme, bay leaf and rosemary, and scrape up the browned bits from the pan. Prick the brats all over with a fork or skewer, add them to the pan, lower the heat and simmer gently for 15 to 17 minutes, turning them halfway through.
- Preheat the grill or cast-iron griddle to medium-high.
- Remove the brats and keep simmering the liquid until it reduces to a sauce-like consistency. Pat the brats dry and score 3 or 4 shallow cuts diagonally on each side. Lightly oil the grill and cook the brats 2 to 3 minutes per side, until well marked.
- Off the heat, stir the mustard and butter into the reduced sauce, then season with salt and pepper.
- To serve, spoon some sauce and the peppers and onions onto a platter, top with the grilled brats, drizzle with the remaining sauce and sprinkle with parsley.
