Hacky Chicken-Mayo Pancakes
Ingredients
- Mayonnaise1 cup
- Chicken · cooked shredded4 cups
- Fruit chutney¼ cups
- Cheddar cheese · grated2 cups
- Egg2
- Milk1 ⅓ cups
- Flour1 cup
- Chive
Instructions
- In a large bowl, mix ¾ cup of the mayonnaise with the shredded chicken and the chutney. Set aside.
- In another large bowl, whisk the remaining ¼ cup mayonnaise with the eggs and milk until well combined. Sift in the flour and whisk until smooth and thin.
- Heat a large non-stick pan over medium heat and spray it with non-stick cooking spray. Pour in about ½ cup of batter and swirl to make a very thin pancake.
- Let the pancake brown for about 1–2 minutes, then flip it. Sprinkle on ¼ cup of cheese and cook the other side for about a minute, until the cheese has melted.
- Move the pancake to a large plate. Spread ½ cup of the chicken-mayo mixture on it and roll it up. Repeat until you have 8 pancakes or the batter is used up.
- Cut each pancake in half, stack the halves neatly on a platter, scatter with chopped chives and serve with extra mayonnaise.
