Ingredients

Instructions

  1. Roughly chop the garlic and green chili. Dice the onion, ginger and tomato. Pat the tofu dry and cut it into bite-sized cubes.
  2. Heat a sauté pan over medium heat and add 2 tbsp avocado oil, then the cumin and fennel seeds. Fry about 45 seconds. Add the onion, ginger, garlic, chili and salt and sauté 5 to 7 minutes. Add the turmeric, garam masala and ground coriander and stir well.
  3. Add the tomato and sauté 3 to 4 minutes. Add a handful of spinach and stir until wilted, then keep adding spinach in handfuls until all is used.
  4. Add the coconut cream and stir well. Transfer to a blender and blend on medium for about 20 seconds, taking care not to over-blend.
  5. Reheat the pan over medium heat with 1 tsp avocado oil and sear the tofu for a few minutes. Turn off the heat and let the pan cool for a minute. Pour in the creamed spinach and stir well. Serve with rice or naan.
