Have You Ever Tried Luqaimat?
Ingredients
- Flour2 cups
- Cornstarch3 tbsp
- Sugar1 tsp
- Salt¼ tsp
- Yeast1 ¼ tsp
- Cardamom · ground½ tsp
- Vegetable oil · for frying
- Date syrup1 cup
- Sesame seed3 tbsp
Instructions
- In a large bowl, mix the flour, cornstarch, sugar, salt, instant yeast and cardamom until smooth and evenly combined.
- Cover with plastic wrap and leave at room temperature or in an oven switched off for 1 hour, until the batter almost doubles in size.
- Pour vegetable oil into a saucepan to one-third full and heat over medium heat until it reaches 350°F.
- Stir the batter well. Keep a small bowl of cold oil nearby. Dip a 1/2 teaspoon measure in cold oil, scoop batter, and drop it into the hot oil.
- Fry 4 to 6 pieces at a time, dipping the spoon in cold oil each time and stirring a few times so they cook evenly. Alternatively, pipe the batter from a plastic bag with a snipped corner into the oil and cut the strands with oiled scissors.
- Fry until golden brown on all sides, 2 to 3 minutes. Lift out with a slotted spoon and toss in the date syrup until coated.
- Arrange on a plate, sprinkle with sesame seeds and serve warm.
