Instructions
- Cut the bell pepper into rough cubes, slice the mushrooms thinly, slice the half onion, and mince the garlic clove.
- Put the beef in a bowl, sprinkle with a pinch of salt and pepper and the ½ tbsp flour, and toss until evenly coated.
- Heat a large pan over medium to medium-low heat and add 1 tsp oil. Once hot, add the beef and sliced mushrooms.
- Sear the beef on both sides and brown the mushrooms, then move both to a heatproof container.
- In the same pan, add the sliced onion with a pinch of salt. Cook until golden and soft; if it sticks, add a splash of water and stir now and then.
- Once soft, add the minced garlic and bell pepper and fry about 30 seconds, until fragrant.
- Pour in 4 tbsp red wine, raise the heat to medium/medium-high, scrape up the bits from the pan and simmer until the alcohol smell fades and the liquid looks syrupy.
- Return the beef and mushrooms to the pan, sprinkle with ½ tbsp flour and mix well. Add 1½ tbsp tomato ketchup, 1½ tbsp Worcestershire sauce and ½ tsp koikuchi soy sauce, and stir-fry for 1 minute.
- Pour in 300 ml beef bouillon, add the bay leaf, and lower the heat to a gentle simmer. Stir now and then and simmer about 5 minutes, until the sauce thickens enough to coat the back of a spoon. Meanwhile, prepare the rice.
- In a second large pan or wok over medium heat, melt 1 tsp butter with 1 minced garlic clove. Once fragrant, add 2 portions cooked short-grain rice (cooled) and stir-fry a few minutes until hot, mixing well. Sprinkle with 1 tsp parsley and turn off the heat.
- When the sauce has thickened, turn off the heat and stir in ½ tsp instant coffee powder, a pinch of nutmeg and 1 tbsp cold unsalted butter until melted into the sauce.
- Divide the rice among plates, spoon the hayashi beef generously alongside, and garnish with a pinch of parsley.
