Instructions
- Cut the bell pepper into rough cubes, thinly slice the mushrooms and the half onion, and mince the garlic clove.
- Toss the 200 g of thinly sliced beef with a pinch of salt and pepper and ½ tbsp all-purpose flour until evenly coated.
- Preheat a large pan over medium to medium-low heat and add 1 tsp cooking oil. When hot, add the beef and sliced mushrooms.
- Sear the beef on both sides and brown the mushrooms, then transfer everything to a heatproof container.
- In the same pan, add the sliced onion with a pinch of salt and cook until golden and soft. If it starts to stick, add a splash of water and stir occasionally.
- When the onion is soft, add the minced garlic and the bell pepper and fry for about 30 seconds, until fragrant.
- Pour in 4 tbsp red wine, raise the heat to medium to medium-high, and scrape the pan to deglaze. Simmer until the alcohol smell fades and the liquid turns syrupy.
- Return the beef and mushrooms to the pan, sprinkle with ½ tbsp all-purpose flour and mix until evenly distributed. Add 1½ tbsp tomato ketchup, 1½ tbsp Worcestershire sauce and ½ tsp koikuchi shoyu, then stir-fry for 1 minute.
- Pour in 300 ml beef bouillon, add 1 bay leaf and mix well. Lower the heat to a gentle simmer and cook, stirring occasionally, for about 5 minutes, until the sauce thickens enough to thinly coat the back of a spoon. Meanwhile, make the rice.
- Heat 1 tsp butter and 1 minced garlic clove in a separate large pan or wok over medium heat. When fragrant, add 2 portions of cooled cooked Japanese short-grain rice and stir-fry a few minutes until warmed through and evenly mixed. Sprinkle with 1 tsp parsley and turn off the heat.
- Once the sauce has thickened, turn off the heat and stir in ½ tsp instant coffee powder, 1 pinch nutmeg powder and 1 tbsp cold unsalted butter until the butter melts into the sauce.
- Divide the rice among plates, spoon the hayashi beef generously alongside, and garnish with a pinch of parsley.
