- Coconut¾ cups
- Baking powder2 tsp
- Coconut oil · melted¼ cups
- Honey⅓ cups
- Vanilla1 tsp
- Salt
Instructions

- Blend 1 cup of the rolled oats into a fine oat flour.
- In a large bowl, combine the remaining rolled oats, the oat flour, coconut, baking powder and salt.
- In a small bowl, mix the melted coconut oil, rice malt syrup or honey, vanilla and water.
- Add the wet mixture to the dry bowl and stir well with a large spoon.
- Scoop a heaped tablespoon of mixture and roll it into a ball with wet hands. If the mix is too dry or crumbly, add 1-2 tablespoons of water or extra coconut oil.
- Place the balls on a baking tray lined with baking paper, leaving gaps between them.
- Gently flatten each ball into a round biscuit with wet fingers, taking care as the mixture breaks easily.
- Bake for 15 minutes for a crunchy biscuit (10 minutes gives a softer one).
- Rest on the tray for 5 minutes, then cool on a rack for 5 more minutes. They crisp up as they cool.
