HEALTHY Creamy Salmon Pasta | Easy ONE-PAN 30 Minute Recipe
Ingredients
- Extra virgin olive oil2 tbsp
- Shallot1
- Garlic4 cloves
- Paprika · smoked½ tsp
- Thyme · dried½ tsp
- Tomato · diced1 can
- Vegetable broth2 ½ cups
- Penne8 oz
- Salmon1 can
- Greek yoghurt1
- Parsley · chopped2 tbsp
- Salt
- Black pepper
Instructions
- Heat the olive oil in a large frying pan over medium heat.
- Thinly slice the shallot and roughly chop the garlic.
- Add the shallot and garlic to the hot pan and stir constantly. When the shallot is translucent after 2 to 3 minutes, add the smoked paprika and thyme, stir quickly, then add the diced tomatoes and season with salt and pepper.
- Raise the heat to high, stir and bring to a simmer. After 3 minutes, when the tomato juices have slightly reduced, add the broth and stir gently.
- When the broth boils, add the penne and stir every 1 to 2 minutes so it doesn't stick.
- After 8 to 9 minutes, when most of the broth is absorbed but some remains, cover the pan, lower to low-medium heat and simmer for 3 to 4 minutes until the pasta is al dente. Then remove the lid and take the pan off the heat.
- Meanwhile, drain the salmon through a fine sieve and gently flake it.
- When the pasta has cooled slightly (about 3 to 4 minutes), stir in the salmon, room-temperature Greek yogurt and chopped parsley. Season generously with black pepper and mix well.
- Serve straight from the pan or transfer to dishes.
