Healthy Granola Cookies Recipe
Ingredients
- Oats1 cup
- Almond · chopped¼ cups
- Walnut · chopped¼ cups
- Pumpkin seed¼ cups
- Sunflower seed¼ cups
- Dark chocolate chip¼ cups
- Chia seed1 tbsp
- Coconut oil¼ cups
- Maple syrup⅓ cups
- Salt
Instructions
- Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper.
- Mix all the ingredients in a bowl until well combined.
- Place a cookie cutter or small cake ring on the tray. Spoon in 2-3 tablespoons of the mixture and press it down with the back of a spoon. Repeat to shape the cookies.
- Bake for 20-25 minutes, until golden. Watch closely, as baking time varies between ovens.
- Alternative shaping: spoon 2-3 tablespoons of mixture onto the tray and cover each with an aluminum muffin cup to limit spreading. Bake for 20-25 minutes, removing the muffin cups during the last 5 minutes, then keep baking until golden.
- Let the cookies cool completely.
