Healthy Jam Oat Bars | Sugar-Free
Ingredients
- Oats1 ½ cups
- Whole wheat flour1 cup
- Salt¼ tsp
- Baking powder½ tsp
- Cinnamon½ tsp
- Butter½ cups
- Maple syrup¼ cups
- Vanilla1 tsp
- Jam1 cup
- Extra fruit
Instructions
- Preheat the oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment, leaving an overhang.
- In a large bowl, combine the rolled oats, flour, salt and baking powder.
- Add the melted butter, maple syrup and vanilla extract. Mix until evenly combined and crumbly.
- Set aside one third of the mixture for the topping. Press the rest firmly into the pan to form the base.
- Spread the sugar-free jam evenly over the base. If using fresh or frozen berries, mix them into the jam first.
- Sprinkle the reserved oat mixture evenly over the jam.
- Bake for 25-30 minutes, until the top is golden brown and the edges are bubbling slightly.
- Let the bars cool completely in the pan so the jam sets.
- Lift the bars out using the parchment overhang, then cut into squares or rectangles.
