Healthy Orange Chicken Stir Fry

Ingredients

Instructions

  1. Make the sauce: whisk the orange zest and juice, honey, soy sauce, ginger, garlic, cornstarch and sriracha together until the cornstarch dissolves. Set aside.
  2. Put the chicken in a large bowl, season with salt and pepper, add the cornstarch and toss to coat evenly.
  3. Heat 2 tablespoons sesame oil in a large skillet over medium-high heat. Cook the chicken 5 to 6 minutes until golden, cooked through and no longer pink. Transfer to a bowl and set aside. Reduce heat to medium.
  4. Add 1 tablespoon sesame oil to the pan, then the onion. Saute about 2 minutes until slightly translucent.
  5. Add the bell pepper, green beans and cashews and cook, stirring occasionally, 5 to 7 minutes in total. The green beans should still have some crunch.
  6. Once the vegetables are slightly tender, pour in the sauce and stir often for 1 to 2 minutes as it thickens. Return the chicken and stir to coat. Reduce heat to medium-low and simmer about 2 minutes more until thickened.
  7. Serve immediately over rice, garnished with toasted sesame seeds and green onion.
