Healthy Oven Lemon Garlic Salmon
Ingredients
- Salmon4 x 180 g
- Lemon4 tsp
- Extra virgin olive oil8 tsp
- Dijon mustard1 tsp
- Garlic2
- Salt½ tsp
- Black pepper¼ tsp
- Asparagus3 bunches
- Cherry tomato200 g
- Each salt and pepper¼ tsp
- Olive oil
- Parmesan cheese
- Parsley
- Bread
Instructions
- Mix the lemon zest, lemon juice, olive oil, Dijon mustard, grated garlic, salt and pepper in a small bowl. Spread it over the top and sides of the salmon. If you have time, marinate for 1 hour.
- Preheat the oven grill/broiler to 280°C (525°F), or as hot as it goes. Set the oven shelf 20 cm (8 inches) from the heat source.
- Toss the asparagus and cherry tomatoes with 2 tsp olive oil, ¼ tsp salt and ¼ tsp pepper. Spread them on a large tray, leaving space in the middle. Place the salmon on the tray with a little space between each piece. Spray the salmon tops with olive oil spray.
- Grill or broil for 11 minutes, until the salmon is done: the flesh flakes easily and the internal temperature reaches 50°C (122°F).
- Transfer the salmon and vegetables to plates. Grate Parmesan over the vegetables. Squeeze lemon juice over the salmon and sprinkle with parsley if using.
